Ingredients
- 1 Orange(s) (medium, peeled and chopped into bite sized bits)
- 1 Banana(s) (peeled and sliced)
- 1 Pear(s) (cored and cubed)
- 1 Mango(es) (peeled and cubed)
- 100 g Blueberries (rinsed and drained well)
- 50 g Walnuts (chopped or crushed)
- 50 g Coconut (unsweetened and shredded)
- 4 tbsp Chocolate (dark, at least 70% cacao, slivered with a vegetable peeler, optional)
- 10 fresh leaves Basil (minced)
- 1 sprig of Mint (fresh, minced)
- 200 g Granola (optional)
- 480 g Yogurt (best with Greek yogurt)

Instructions
- In a medium mixing bowl, add the oranges and press gently with the back of a wooden spoon to release some juice. Gently fold in the mango, pear, banana and blueberries.
- In parfait cups, add a couple of tablespoons of granola if using, then a couple of tablespoons of yogurt, top with a couple of tablespoons of fruit mixture then sprinkle with walnuts and coconut and repeat.
- Top parfaits with chocolate and the minced basil and mint.
