  • 250 ml Water (cold)
  • 50 g Sugar (caster)
  • 1 stick Cinnamon
  • 1 pinch of Saffron (strands)
  • 1 tbsp Honey
  • 12 Apricot(s)
  • 150 g Yogurt (best with Greek yogurt)
  • 50 g Pistachios (crushed)

Instructions
  1. Cut in half the apricots.
  2. Put the water, sugar, cinnamon stick, saffron and honey into a pan and heat until the sugar has dissolved.
  3. Simmer gently for five minutes before adding the apricots. Simmer for a further five minutes. Remove from the heat and discard the cinnamon stick.
  4. Serve the apricots warm on a bed of yogurt, and drizzle over the syrup.
