  • 1 Cucumber (peeled and diced, 30 g reserved for garnish)
  • 1 Avocado(s) (pitted, peeled, and diced, 30 g cup reserved for garnish)
  • 1/2 Lemon(s) (finely grated zest & 1 tbsp fresh juice)
  • 50 g Cilantro (coarsely chopped fresh, plus sprigs for garnish)
  • 2 tbsp Scallion(s) (white and pale-green parts only, coarsely chopped)
  • 1 Jalapeño (seeded and coarsely chopped)
  • 250 g Yogurt
  • 235 ml Water (cold)
  • 1 1/2 tsp Salt (Coarse)
  • 1/4 tsp Black pepper (freshly ground)

Instructions
  1. Puree ingredients in a blender. Divide soup and reserved cucumber and avocado among 4 bowls. Cover with plastic wrap. Refrigerate for 30 minutes. Garnish with cilantro sprigs.
