Ingredients
  • 500 g Cashews (soaked 3 hours or overnight)
  • 1 tsp Psyllium husks (+1/2 cup of filtered water)
  • 1 Banana(s)
  • 1 tsp Vanilla
  • 1 tbsp Oil (coconut)
  • pinch of Salt (sea)
  • 2 tbsp Lemon(s) ((2 tbsp juice + filtered water))
  • 200 g Yogurt
To make a parfait:
  • 240 g Berries (such as blueberries, raspberries, or blackberries, fresh or frozen)
  • 120 g Granola (of choice)
  • Bee pollen (additional add)
  • Chia seeds (additional add)
  • Hemp seeds (additional add)

Instructions
  1. In a small bowl, mix the psyllium husks with water and set aside allowing it to thicken.
  2. Drain the soaked cashews, and place them into a high-powered blender, or a food processor. Add the banana, vanilla, coconut oil, salt, and lemon juice. While the blender or food processor is running continuously, add the water in a slow stream. You might need a little more than 120 ml. Add the yogurt. Add additional water a tablespoon at a time, until the mixture runs smooth, but is still thick and creamy.
  3. Transfer the yogurt to a bowl, and stir in the thickened psyllium husks. Place in the fridge for 30 minutes, and then your yogurt is ready to enjoy.
  4. If you want to make a parfait, layer your parfait ingredients alternating with layers of yogurt. Use small mason jars, and store them (with a tight lid) in the fridge. These will keep for a couple of days in an air-tight container in the fridge.
